The records of the notary offices of present-day Peru date back to their antecedents in the Governorate of New Castile (Kingdom of Spain) as part of the process of conquest of the so-called Inca Empire since 1533, which continued in the Viceroyalty of Peru, created in 1542, which contextualize and record in their protocols the public office to attest to the acts through writings and actuaries among private individuals, given their knowledge of writing and the laws.

Among the scribes of the Villa de Valverde de Ica of the Viceroyalty of Peru, created in 1563, we find the scribes García de Córdova, Pedro de Orbaneja, Francisco Nieto, Juan de Ayala and Juan de Herrera, whose protocols include public deeds from the late sixteenth century and early seventeenth century in which they tell about the beginnings, growth and development of vine cultivation in the vineyards; the production and trade of wine and brandy through companies, pulperías and stores; the materials, tools and utensils for the distillation of brandy such as the boiler, botijas, botijuelas, pultayas, among others; also, the strong presence of foreigners from Greece in the role of producer and trader of wine and brandy from the port of Pisco to other ports such as Callao, Arica and others internationally, which are recorded in these manuscripts from 1587 to 1613. For this reason, they are records that contextualize the beginnings of grape cultivation, wine and brandy production that occurred in parallel with the Spanish colonization process from the late sixteenth century onwards; therefore, they have an enormous historical, social and cultural significance in the Villa de Valverde de Ica because after a historical and cultural process, it would later be called pisco or grape brandy until it reached its current name of Pisco, known worldwide.
